Ingredients:
– Chrono mix 310g
– half-white flour T-850
– butter or margarine 200g
– mix of sunflower, chia, sesame and flax seeds (as desired) 70g
– sea salt 5-6g
– room temperature water (if needed) 100ml
– flour for dough processing
Bake for about 20 minutes at 170˚C until it becomes golden
I’ve heard of expressions like “healthy snacks” made out of “healthy food”.
This is something for those days when we are not very diligent.
We will start the preparation by heating margarine or butter for cookies up to room temperature, then add all other dry ingredients and mix them together. I like doughs like this, they are full of uncertainties, and in the end they turn out the way I want it to be. We will correct the smoothness and moisture of the dough by adding water. Pour water lightly, it is similar to making crispy dough for tarts. So, we add water gradually, when the margarine starts to homogenize with the flour, due to the action of friction and pressure, but also because of the body temperature during the mixing.
It would be good to cool the dough a little before kneading. To make this easier, divide this dough into two buns. Sprinkle a thin layer of flour on the base and on top of the dough. We spread the dough with a rolling pin as thin as possible. If it sticks, sprinkle with more flour, but not too much. The thinner the dough, the nicer the cakes will be, so it’s up to you what you’re gonna do.
The next step is cutting the dough to the appropriate size. A rectangle is always the right choice. Put it on a baking sheet and start baking. The duration of baking as well as the temperature is relative, I gave you the approximate parameters, and the most important advice is that the cakes must be completely dry, baked and moderately yellow. The baking test is as follows: take one cake, cool it just enough to break it between your fingers. If it is elastic and does not crack crispy, you have to bake it a bit longer. It’s a big flaw if it gets too dark, it will become bitter, which is not a good option. If you notice that the cakes changed the color around the tenth minute, you should know that the temperature is high and it needs to be lowered.
